BBQ Chicken Pizza


Today’s recipe is a bit more complex, or as simple as you want it to be, really.

I took the liberty of linking a couple of other recipes within this one, one for a cauliflower pizza crust, and the other for Hawaiian BBQ sauce.

Hawaiian BBQ, also known sometimes as Huli Huli sauce, is a sweet and spicy teriyaki style glaze.

The recipe I linked has a quick history of the sauce as well, which I thought was fun. This is a great sauce to just have around in the fridge, just waiting to help you with a quick creation.

What’s great about this recipe is it has so many ways to personalize it, and to make it as simple or complex as you desire!

However you fix this pizza, enjoy it!

BBQ Chicken Pizza

  • 1 large plain crust (This is a great place to try a cauliflower crust if you never have!)
  • 1/2 cup + 1/4 cup hawaiian bbq sauce, divided
  • 1 large chicken breast (about 8 oz)
  • 1 cup smoked mozzarella, shredded*
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup cilantro leaves, chopped

1. Marinate chicken breast in 1/4 cup Hawaiian bbq sauce for ~30 minutes.

2. Grill chicken until done, remove from heat and chop into small, bite-size pieces.

Optional: toss chopped chicken with additional bbq sauce.

3. Assemble the pizza: Spread remaining 1/2 cup bbq sauce on plain pizza crust.

4. Top with cheese and chicken.

5. Bake for ~8 minutes, or until cheese is slightly melted.

6. Remove pizza from oven and top with red onion.

7. Return pizza to oven and bake and additional 2-3 minutes.

8. Top hot pizza with chopped cilantro, slice, and serve!
